Blade Type

The Gyuto knife, a cornerstone of Japanese culinary tradition, is a versatile, all-purpose chef's knife. Its name, translating to "beef sword," reflects its proficiency in slicing meat and in more modern times vegetables. However, its slightly curved blade excels in chopping, dicing, and mincing, making it indispensable in any kitchen.

Steel Type

Japanese SG2, also known as R2 steel, is a high-end, powdered metallurgy stainless steel and one of the finest knife-making steels available in Japan. It is a favourite of many for its exceptional hardness and edge retention. Its fine, uniform grain structure enables razor-sharp edges, all the while holding an edge for much longer than Carbon steel knives, without needing to be concerned about rust appearing.

Recommended Maintenance

Store it in a dry environment using magnetic strips, knife rolls, or sayas. Avoid hitting hard or frozen objects and twisting the blade while cutting. These knives are not dishwasher safe. Knife Care

This knife is made with a stainless steel and is easy going and low on maintenance. It has high chromium content, meaning it is generally considered safe to leave wet on the board for short periods of time. is still best practice to not leave this knife to air dry as it's stain-less not stain-none! Wipe down after washing the knife and store away from any sources of moisture.

Amazing knife

Cutting like a hot knife through butter!!

Nigara Double Blonde Kurouchi 210 mm gyuto

A beautiful piece. The double blonde handle coupled with a muti-colored swirl ferrule makes this knife more than just a tool. With an SG2 stainless core, cladded with a kurouchi finish, this is just a great looking knife. Now here is what surprised me. I wasn't looking for a laser and I thought a 2.4 mm width at the heel might be too thin. But the blade does not thin down towards the tip as radically as other knives I have seen. It keeps its width pretty much down to the tip, only then does it taper. So it has more "muscle" than I thought it would. Not that I am cutting coconuts with it but I don't worry about bending or breaking it when I try to julienne carrots as my cutting skills leave much to be desired. Gotta give it up to Chef's Edge because I left email notices for lots of companies here in the US and Canada for gyutos I was considering buying. Never would I have expected to hear first from Australia, though, logically it would make sense given the smaller distance between Japan and Australia for re-stocking items. Shipping to the US was very fast and not expensive at all. I've paid more for shipping items here in the States.
