The Santoku knife, a classic in Japanese kitchens, translates to "three virtues," symbolizing its proficiency in slicing, dicing, and mincing. Steel Type

Japanese SG2, also known as R2 steel, is a high-end, powdered metallurgy stainless steel and one of the finest knife-making steels available in Japan. It is a favourite of many for its exceptional hardness and edge retention. Its fine, uniform grain structure enables razor-sharp edges, all the while holding an edge for much longer than Carbon steel knives, without needing to be concerned about rust appearing.

Recommended Maintenance

Store it in a dry environment using magnetic strips, knife rolls, or sayas. Avoid hitting hard or frozen objects and twisting the blade while cutting. These knives are not dishwasher safe. Clean with hot water and a soft cloth, and dry immediately after use to prevent rust spots on the high carbon steel. For more information please read the blog below.

Knife Care

This knife is made with a stainless steel and is easy going and low on maintenance. It has high chromium content, meaning it is generally considered safe to leave wet on the board for short periods of time. is still best practice to not leave this knife to air dry as it's stain-less not stain-none! Wipe down after washing the knife and store away from any sources of moisture.

Takamura SG2 Santoku

I had high hopes for this purchase because I heard so much about the quality of Takamura knives. And I was not disappointed! It was sharp as out of the box and quality of the finish on the blade and handle was marvellous. I could feel the knife going through the carrot like butter but with my other Japanese knives, I could feel the carrot "cracking" as the knife through. The delivery from Chef Edge was also quick even though it had to come all the way from one end of the continent to the other. I am very happy with the purchase and now thinking I should get a matching gyuto. Any idea when they might become available?

Excellent quality and finish!

Bought this santoku to replace my current one and I must say I'm very impressed with the quality and finish of this knife. It's my first SG2 knife and I might consider buying other types in this material. It's super sharp out of box and cuts like Lazer. The handle is very comfortable too and most of all The Guys at ChefsEdge got this delivered super quick! Kudos ChefsEdge Team
